fix(display): Tweaks to memory Kconfig settings.

Browse Source 
* Don't default heap mempool by default now that there's a dedicated
  LVGL mempool
* Set proper defaults for CiZ display hardware/custom screen.
* Double the dedicated display thread stack size for CiZ.
